This recipe allows you to easily make ‘Yakbap Bread’ that tastes like traditional Korean Yakbap, by soaking leftover bread in brown sugar syrup and adding dried dates, pine nuts, and walnuts – all Korean-produced ingredients. It boasts a delightful chewy texture and a rich flavor reminiscent of yakbap, making it a perfect snack for kids or a delightful dessert for adults.

  • 160g sandwich bread
  • 170g all-purpose flour
  • 10g baking powder
  • 30g milk
  • 30g unsalted butter
  • 30g walnuts
  • 15g pine nuts
  • 30g corn syrup

First, prepare the dried dates to add a sweet and chewy texture. Wash the dried dates thoroughly, remove the pits, and thinly slice them. Place the sliced dates in a small bowl, add the corn syrup, mix well, and let them steep for about 10 minutes. This process softens the dates and infuses them with a subtle sweetness, deepening the flavor of the Yakbap Bread.

Now it’s time to prepare the bread base. Cut the sandwich bread into large cubes, about 2-3 cm in size, without removing the crusts. Cutting them into larger pieces helps maintain the bread’s texture and prevents it from falling apart too easily when soaked in syrup. Place all the cut bread pieces into a large mixing bowl.

Pour the warm, cooled brown sugar syrup evenly over the bread cubes. To make the syrup, combine the 170g brown sugar and 30g corn syrup in a saucepan and heat over low heat, stirring until the sugar dissolves. It’s best to let the syrup cool down a bit before using it, as overly hot syrup can make the bread mushy. Once the syrup is poured, gently mix the bread cubes with a spatula or spoon until they are thoroughly and evenly soaked in the syrup. It’s important to mix for about 1-2 minutes to ensure the bread absorbs the syrup well.

Now, let’s mix in the remaining ingredients to complete the Yakbap Bread. To the syrup-soaked bread bowl, add the prepared dried dates, crushed walnuts, pine nuts, all-purpose flour (sifted), baking powder, melted unsalted butter, and milk. Gently mix everything together with a spatula until well combined and no dry flour is visible. Avoid overmixing; a quick mix is best.

It’s time to place the batter onto an oven pan and bake. It’s helpful to line the baking pan with parchment paper beforehand to prevent the bread from sticking and make it easier to remove later. Press the batter evenly into the prepared pan. Bake in a preheated oven at 170°C (340°F) for approximately 35 minutes. If the top starts to brown too quickly during baking, you can cover it loosely with aluminum foil. Bake until it develops a nice golden-brown color.
