This recipe uses fresh, sweet potatoes brought from my parents’ home over the weekend. One of them was particularly large and sweet. Out of 20 potatoes, I gave 10 to my in-laws and plan to use the remaining 10 for various dishes.

Wash the sweet potatoes thoroughly under running water. You can peel them completely using a vegetable peeler, or as shown in the photo, leave some stripes of skin for a decorative touch.

Sweet potato pancakes are sometimes offered as a ceremonial food. Since we are not observing a ceremony, I decided to make them as a warm winter snack. (Tip: In the past, I injured my hand badly while slicing sweet potatoes with a mandoline, requiring six stitches. Because of that experience, I now slice them thickly with a knife for safety. Please be careful when slicing!)

To prevent browning and keep the sliced sweet potatoes fresh, soak them in cold water for a short while. This step also helps to remove excess starch.

Let’s prepare the batter that will coat the sweet potatoes. Mix pancake mix (Buchim Garu) and water in a 1:1 ratio. The pancake mix is already seasoned, so no extra salt is needed. If you are using regular flour, add a pinch of salt to season it.

To help the batter adhere better to the sweet potatoes, lightly coat the sliced sweet potatoes with frying powder. This step will make the pancakes crispier.

Dip the sweet potato slices, lightly coated with frying powder, into the prepared batter, ensuring they are well-coated. Mix them gently so the batter covers each piece evenly.

Heat a generous amount of cooking oil in a pan. Place the batter-coated sweet potato slices one by one and fry until golden brown. (Tip: Aim for a thin coating of batter rather than a thick one for a better texture. If you rush the process, the batter might become too thick, so try to be mindful and adjust as needed.)
