Ingredients- 1 fresh pineapple
- 1 stalk green onion
- 1/3 carrot
- 2 Tbsp cooking oil
- 180g cooked rice (warm)
- 1 Tbsp soy sauce
- 1 Tbsp fish sauce
- 1 Tbsp pineapple juice (or dedicated pineapple fried rice sauce)
Cooking Instructions
Step 1
First, prepare your fresh pineapple. Cut the pineapple in half lengthwise. Keeping a neat shape is important for presentation.
Step 2
Carefully cut out the pineapple flesh without damaging the skin. The skin will be used as a serving bowl, so try to keep its shape intact.
Step 3
Using a spoon, gently scoop out any remaining pineapple flesh from inside the skin you just prepared. This ensures you utilize all the fruit.
Step 4
Dice the scooped-out pineapple flesh into bite-sized pieces. This makes it easier to enjoy in the fried rice. Avoid pieces that are too large.
Step 5
Finely chop the green onion for aromatic flavor, and finely dice the carrot to add color and texture to the rice. Finely chopped vegetables blend better into the fried rice.
Step 6
Heat the cooking oil in a pan over medium heat. Add the chopped green onion and diced carrot, and stir-fry until fragrant. Sautéing the vegetables thoroughly will release their natural sweetness and aroma.
Step 7
Add the warm cooked rice to the pan with the sautéed vegetables. Use a spatula to break up any clumps of rice and stir-fry until the grains are separated and slightly toasted. Ensuring the rice is fluffy is key.
Step 8
Once the rice is partially fried, add the soy sauce, fish sauce, and pineapple juice. Stir well to combine all the ingredients. The savory notes from the soy sauce and fish sauce, along with the refreshing pineapple juice, create a wonderful flavor profile.
Step 9
Finally, add the prepared pineapple chunks and stir-fry briefly. It’s important not to overcook the pineapple to preserve its fresh texture and sweetness. Your delicious pineapple fried rice is ready!
