Main Ingredients

  • 5 medium onions

Pickling Brine

  • 3 cups soy sauce
  • 3 cups granulated sugar
  • 3 cups vinegar
  • 1 cup water

Cooking Instructions

Begin by thoroughly washing the 5 onions and patting them dry. Peel the outer layers off. Cut each onion in half, then into quarters. Further cut these quarters into bite-sized pieces, about 2-3 cm in length. Place the cut onions into a clean, dry container. Ensure the container is completely dry and, if possible, sterilized with hot water, as this helps prevent the pickles from becoming soggy and extends their shelf life.

In a small pot, combine 3 cups of soy sauce, 3 cups of granulated sugar, 1 cup of water, and 3 cups of vinegar. Place the pot over high heat and stir until the sugar and soy sauce are completely dissolved. Once the mixture comes to a boil, reduce the heat to medium and simmer for another 2-3 minutes, stirring occasionally, to allow the flavors to meld. Boiling the brine helps to remove any raw taste from the ingredients and deepens the flavor. Let the cooked brine cool down completely before use.

Pour the completely cooled pickling brine over the cut onions in the container. Make sure the onions are fully submerged in the brine for even pickling. After pouring the brine, cover the container and let it sit at room temperature for one day to age. After this initial day, you’ll notice the onions starting to absorb the flavors. Transfer the container to the refrigerator and let it age for another day. This second day of refrigeration will result in delightfully crisp, sweet, and tangy pickled onions ready to be enjoyed. Stored in the refrigerator, these pickles will stay delicious for a long time.
