Sweet & Tangy Persimmon Salad Recipe
Delicious Persimmon Salad (Gakdugi Style) Made with Seasonal Persimmons
Bursting with the natural sweetness of ripe persimmons, this salad is perfectly balanced with a spicy and savory seasoning that will tantalize your taste buds. It’s a simple yet delightful side dish that’s incredibly appetizing.
Main Ingredients- 2 persimmons
- 1 Tbsp gochugaru (Korean chili flakes)
- 1/2 Tbsp fish sauce (or soy sauce)
- 1 tsp minced garlic
- 1/2 Tbsp crushed toasted sesame seeds
- A little green onion or scallion (optional)
Cooking Instructions
Step 1
First, peel the skin off 2 ripe persimmons. Remove the seeds and cut them into bite-sized pieces, about 1.5cm thick, similar to how you would cut radish for ‘gakdugi’ (Korean radish kimchi). It’s best to cut them slightly thick so they don’t become mushy when mixed.
Step 2
Add 1 tablespoon of gochugaru to the cut persimmons. Gently toss them to coat the persimmon pieces evenly with the chili flakes. This initial coating helps the persimmons absorb the seasoning better.
Step 3
Now, it’s time to add the remaining seasonings. Add 1/2 tablespoon of fish sauce (or soy sauce), 1 teaspoon of minced garlic, and 1/2 tablespoon of crushed toasted sesame seeds. If you’re using green onions or scallions, chop them finely and add them now. Gently toss everything together one more time to ensure all ingredients are well combined. Your delicious persimmon salad is ready!
Step 4
Taste the finished salad. If it seems a bit bland, you can add a little more fish sauce or soy sauce. For a touch of tanginess, a small amount of plum extract (‘maesilcheong’) can also be added to adjust the flavor to your preference. Remember that persimmons are naturally sweet, so adjust the seasoning quantities accordingly. You can enjoy it immediately, or chill it in the refrigerator for a while to enhance its refreshing taste.
