Sweet & Tangy Peach Dressing
Aromatic Peach Salad with Homemade Peach Dressing Recipe
Hello everyone! Today, we’re making a delightful peach salad with a vibrant, homemade peach dressing. Peaches, also known as ‘doja’, are wonderfully sweet and slightly tart with a warm nature. They are categorized into white peaches (baekdo), which are juicy and perfect for fresh eating, and yellow peaches (hwangdo), which are firmer and often used for canning. Peaches are alkaline, boosting immunity, and their fiber content aids digestion, preventing constipation. The skin possesses detoxification properties, and the organic acids can help counteract nicotine, making them beneficial for smokers. Let’s capture the essence of summer with this fresh and flavorful peach salad and dressing!
Salad Ingredients- 1 white peach
- 3 leaves of iceberg lettuce
- 1 handful of lettuce
- 1/4 carrot, julienned
- 1/4 red onion
- 1/2 handful of crown daisy (ssukgat)
- 1/2 ripe peach (for dressing)
Cooking Instructions
Step 1
Start by preparing the peaches. Gently wash them under cool water. For any fuzzy peaches, a helpful tip is to soak them in warm water with 1-2 tablespoons of vinegar for about 5-10 minutes. This softens the fuzz, making it easy to remove with a soft scrub brush or a gentle rub. Rinse thoroughly under running water. You can enjoy the peaches with their skin on for extra nutrients.
Step 2
Now, let’s prepare the salad greens. Tear the iceberg lettuce into bite-sized pieces by hand. Cut the regular lettuce into three equal parts. Finely julienne the red onion; soaking it in cold water for a few minutes can mellow its pungent flavor. Julienne the carrot to match. Chop the crown daisy into manageable pieces. Feel free to add other vegetables like bell peppers or cucumbers if you have them on hand. This is a great way to use up whatever you have in your refrigerator!
Step 3
For the peach salad, make an incision around the peach’s pit. Then, gently twist the two halves in opposite directions to separate them, leaving the pit behind. Discard the pit and cut the peach flesh into your desired serving size. Remember, the skin is packed with nutrients, so if you’ve washed it well, it’s best to keep it on.
Step 4
Let’s make the delicious peach dressing! For the dressing, take half of the ripe peach (set aside earlier), remove the pit, and chop it finely. If you prefer a sweeter dressing, you can add a touch of honey or sugar. However, the natural sweetness of the peach is often enough! I’ve omitted added sugar here to let the peach flavor shine. A tiny pinch of salt enhances the overall sweetness.
Step 5
Combine the chopped peach for the dressing, olive oil, lemon juice, and the pinch of salt in a blender. Blend until smooth and creamy. If you desire a very silky texture, you can strain the dressing through a fine-mesh sieve.
Step 6
Arrange the prepared salad greens – iceberg lettuce, lettuce, red onion, carrot, and crown daisy – attractively on a serving plate or in a bowl. Gently place the sliced fresh peach pieces on top of the greens for a beautiful presentation.
Step 7
Finally, drizzle the luscious homemade peach dressing generously over the salad. Your vibrant and refreshing ‘Peach Salad with Peach Dressing’ is ready to be enjoyed! Taste the delightful combination of fresh fruits and vegetables. Enjoy your healthy and delicious meal!
