Salad Ingredients- 2 ripe mangoes
- 2 ripe avocados
- 1 cup cherry tomatoes
- 1/2 red onion (small)
- 1 cup baby greens (e.g., romaine, arugula)
Lime Dressing- 2 Tbsp olive oil
- 1 Tbsp lemon juice
- 1 Tbsp lime juice
- 1-2 Tbsp honey (or agave syrup, to taste)
- 3 pinches salt
- 2 pinches black pepper
- Pinch of crushed red pepper flakes (optional)
- 2 Tbsp olive oil
- 1 Tbsp lemon juice
- 1 Tbsp lime juice
- 1-2 Tbsp honey (or agave syrup, to taste)
- 3 pinches salt
- 2 pinches black pepper
- Pinch of crushed red pepper flakes (optional)
Cooking Instructions
Step 1
First, carefully peel the avocados and mangoes, and remove their pits. Cut the flesh into bite-sized pieces, about 2cm cubes. Aim for similar sizes for both fruits to ensure a harmonious texture and appearance.
Step 2
Finely chop the red onion or slice it thinly. If you find raw red onion too strong, you can soak the chopped onion in cold water for about 5 minutes, then drain it well before adding to the salad. Wash the cherry tomatoes, remove the stems, and halve any larger ones.
Step 3
In a small bowl, combine all the dressing ingredients: olive oil, lemon juice, lime juice, honey (or agave syrup), salt, pepper, and optionally, a pinch of crushed red pepper flakes. Whisk or use a fork to thoroughly mix until the dressing is well combined and slightly emulsified. Taste and adjust the seasoning as needed – you might want a little more honey for sweetness or salt to enhance the flavors.
Step 4
In a large salad bowl, gently combine the prepared mango, avocado, red onion, and cherry tomatoes. Drizzle the freshly made lime dressing evenly over the ingredients. Use a spatula or your hands to gently toss the salad, being careful not to mash the delicate fruits. Ensure all the components are lightly coated with the dressing.
Step 5
Finally, arrange the fresh baby greens on top of the salad for a beautiful presentation and added freshness. This salad is best served immediately. For an extra touch, consider adding some toasted nuts or crumbled feta cheese.
