Essential Ingredients- 5 ripe tomatoes (approx. 700-800g)
- 200g granulated sugar (adjust based on tomato sweetness)

Step 1
Prepare 5 fresh, ripe tomatoes. Wash them thoroughly. Lightly score the skin at the top of each tomato with a cross (‘+’) shape. Blanch the tomatoes in boiling water for about 30 seconds to 1 minute. This will make peeling much easier.
Step 2
Immediately transfer the blanched tomatoes to cold water to stop the cooking. Once cooled, gently peel the skin away, starting from the scored lines. Remove the tough stem ends as well. This step ensures a smooth texture for your jam.
Step 3
Place the peeled and cored tomatoes into a blender or food processor. Blend until you achieve a smooth puree. For an extra-silky consistency, you can strain the puree through a sieve, though this is optional.

Pour the pureed tomatoes and 200g of granulated sugar into a deep saucepan. Stir well to combine. Place over medium-low heat and begin to cook, stirring occasionally with a spatula to prevent sticking. Let it simmer gently for about 60 minutes, allowing the moisture to evaporate and the mixture to thicken.
Step 5
Once the jam has reached a thick, jam-like consistency, stir in 1/4 tsp of salt and 1/2 tsp of lemon juice. The lemon juice adds a bright tanginess that complements the sweetness of the tomatoes and also acts as a natural preservative. Continue to cook for another 10 minutes.
