I personally love pickled radishes (ssammu)! While not always essential, they certainly enhance the flavor when wrapping meat with fresh greens. I had some ssammu left in the refrigerator from grilling meat, so I decided to make a dish with it today. It’s a truly simple ssammu dish: a chive and pickled radish salad. Since the ssammu itself is already seasoned, you can create a delicious result with just basic seasonings, even without special ingredients. Main Ingredients- 400g pickled radish wrappers (ssammu), drained
- 100g fresh chives
Seasoning Ingredients- 3 Tbsp red pepper flakes (gochugaru)
- 1 Tbsp soy sauce
- 1 Tbsp fish sauce
- 1 Tbsp sugar
- 1 Tbsp minced garlic
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds (plus extra for garnish)
- 3 Tbsp red pepper flakes (gochugaru)
- 1 Tbsp soy sauce
- 1 Tbsp fish sauce
- 1 Tbsp sugar
- 1 Tbsp minced garlic
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds (plus extra for garnish)
Cooking Instructions
Step 1
First, wash the fresh chives thoroughly and drain any excess water. Then, cut them into approximately 4cm lengths for easy eating. Using fresh chives will significantly impact the final flavor, so choose vibrant ones.

Drain the pickled radish wrappers (ssammu) well using a sieve. If there’s too much moisture, the salad might taste bland. Once drained, cut the ssammu into roughly 2cm pieces. Avoid cutting them too small, as this can diminish their satisfying crunch. Aim for bite-sized pieces.
