Homemade Sweet Potato Curry Rice with Honey Sweet Potatoes
These sweet potatoes are exceptionally sweet and delicious right now! This is a healthy meal: sweet potato curry made with honey sweet potatoes. Enjoy!
Ingredients- 2 Honey Sweet Potatoes
- 1 Onion
- A little bit of Carrot
- 2 King Oyster Mushrooms
- 1 Red Bell Pepper
- 1 Yellow Bell Pepper
- 1/2 Zucchini
- 150g Curry Powder
Cooking Instructions
Step 1
Let’s use 2 firm honey sweet potatoes for a delicious curry base. Dice all the vegetables into bite-sized pieces, similar in size to the sweet potatoes. Heat 1-2 tablespoons of cooking oil in a deep pan over medium heat. First, add the diced onion and sauté until it becomes translucent to release its fragrance. Once the onion is slightly softened, add the carrots and stir-fry together.
Step 2
When the onion and carrots are partially cooked, add the diced honey sweet potatoes and stir-fry gently to combine the ingredients. Next, add the zucchini and stir-fry together, allowing the vegetables’ sweetness to meld.
Step 3
Once all the vegetables have softened slightly, pour in about 500ml of water (about 2.5 cups), slightly more than you would for rice, and bring to a boil over high heat. Once boiling, reduce the heat to medium-low, then add the diced bell peppers and king oyster mushrooms. Cook for another few minutes. If you have any leftover vegetables in the fridge, feel free to add them now for an even richer flavor! (Cabbage was added in this recipe.)
Step 4
When the vegetables are tender, stir in 150g of curry powder. It’s important to dissolve the curry powder thoroughly, ensuring there are no lumps, using a whisk or spatula. Once the curry powder is well incorporated into all the ingredients, continue to simmer over medium-low heat, stirring constantly, until the curry thickens to your desired consistency.
