Hello everyone! Today, we’re going to make a delicious seasoned spinach salad using ‘Seomcho’ (spring spinach), which is extra sweet this season. It’s simple yet a fantastic side dish that will make you finish a bowl of rice in no time!

First, let’s prepare the spinach. Trim off the root ends of the spinach and rinse it thoroughly under running water multiple times to remove any dirt trapped between the leaves. You might be surprised how much soil comes off! Now, fill a pot with plenty of water and bring it to a rolling boil over high heat. Once the water is boiling, add the cleaned spinach and blanch it for just 40 seconds. Be careful not to overcook it, as it will become mushy; timing is key here.

As soon as the spinach is blanched, immediately remove it from the hot water and rinse it briefly under cold water to cool it down. This step helps maintain its crisp texture and vibrant green color. After rinsing, gently pick up the spinach with both hands and squeeze out the excess water. If there’s too much water, the seasoning will be diluted, so squeezing it firmly but gently is important.

Alright, now let’s season and mix it! Place the squeezed spinach in a bowl. Add all the prepared seasoning ingredients: 1/2 tsp soy sauce (or fish sauce), 1/2 tsp minced garlic, a little chopped green onion, a little sesame seeds, and a little sesame oil for that nutty aroma. Now, gently mix everything together with your hands. The key is to toss it gently so you don’t mash the spinach, ensuring the seasoning is evenly distributed.
