Kkanpung Sauce- 1 Tbsp Soy sauce
- 1 Tbsp Sugar
- 1 Tbsp Mirin (rice wine)
- 1 Tbsp Vinegar
- 1 Tbsp Oyster sauce
- 1 Tbsp Water
- 1 Tbsp Soy sauce
- 1 Tbsp Sugar
- 1 Tbsp Mirin (rice wine)
- 1 Tbsp Vinegar
- 1 Tbsp Oyster sauce
- 1 Tbsp Water
Cooking Instructions
Step 1
First, let’s prepare the vegetables. Finely chop the onion. Avoid chopping it too finely, as it can become mushy when stir-fried. Aim for a slightly coarse chop for better texture.
Step 2
Cut the Cheongyang pepper and red bell pepper lengthwise in half, remove the seeds, and then finely chop them. If you prefer more heat, you can increase the amount of Cheongyang pepper or leave some seeds in.
Step 3
Now, let’s make the simple yet flavorful kkanpung sauce. In a small bowl, combine 1 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp mirin, 1 Tbsp vinegar, 1 Tbsp oyster sauce, and 1 Tbsp water. Stir well until the sugar is dissolved. This sauce is the key to the delicious flavor!
Step 4
It’s time to cook the donggeurangttaeng. Heat a non-stick pan over medium-low heat and place the donggeurangttaeng in it. Cook until golden brown on both sides. Pan-frying them first helps to seal in the juices and create a chewier texture.
Step 5
In another pan, heat 1 Tbsp chili oil over medium heat. Add the minced garlic and chopped onion, and stir-fry over high heat for a short time until fragrant. You’ll smell a wonderful aroma as the onion starts to turn translucent.
Step 6
Pour the prepared kkanpung sauce into the pan with the stir-fried onion and garlic. Bring the sauce to a boil and stir everything together.
Step 7
Let the sauce simmer slightly until it thickens a bit. Once the sauce has reduced slightly, add the cooked donggeurangttaeng and the chopped peppers (red and Cheongyang). Toss everything quickly to ensure the donggeurangttaeng and peppers are evenly coated with the sauce. Stir-frying over high heat keeps the vegetables crisp and prevents the donggeurangttaeng from becoming soggy.
Step 8
Turn off the heat and drizzle in 1 Tbsp of sesame oil. Give it a final mix. Your delicious Kkanpung Donggeurangttaeng is ready! Serve immediately while warm for the best flavor.
