My homemade pickled garlic has perfectly ripened to a delightful sweet and sour flavor. It’s delicious eaten as is, but I also discovered it’s incredibly tasty when tossed with gochujang for a spicy kick. Today, I’ll share two fantastic ways to enjoy your pickled garlic!

Ingredients for Pickled Garlic and Seasoning
  • 200g well-aged pickled garlic
  • 1 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp corn syrup (or other liquid sweetener)
  • 1/2 Tbsp toasted sesame seeds
  • A little sesame oil (optional)

Cooking Instructions

Step 1

On July 11, 2024, I took out the pickled garlic I made myself. I had stored it wrapped in a black bag in a cool, dark place, away from sunlight. Upon opening it, I was delighted to see that the garlic had no discoloration, turning out perfectly preserved and clean. It looked so appetizing!

Step 2

First, I tasted the well-aged pickled garlic just as it was. The tangy and sweet flavor spread through my mouth, and it was absolutely delicious. The crisp texture and deep flavor were perfectly intact, making it an excellent side dish.

Step 3

Now, for a special twist, I’m going to toss the pickled garlic with a savory seasoning. To 200g of pickled garlic, I’m adding 1 tablespoon of gochujang. The umami and mild spiciness of the gochujang will create a wonderful harmony with the pickled garlic.

Step 4

Next, I’m adding 1 tablespoon of corn syrup for sweetness and a nice glaze, and 1/2 tablespoon of toasted sesame seeds for a nutty aroma. These additions will further enhance the flavor profile of the pickled garlic.

Step 5

If you like, a drizzle of sesame oil can add an extra layer of nutty fragrance. Now, gently mix everything together. It’s important to toss it gently so that the pickled garlic doesn’t break apart, ensuring the seasoning is evenly distributed.

The sweet and sour flavor of the original pickled garlic is now complemented by the spicy gochujang mixture. This flavor transformation is remarkable! This dish is truly a ‘rice thief’ – it makes you want to eat bowl after bowl of rice!
