Main Ingredients

  • 200g fish cakes (eomuk), cut into desired bite-sized pieces
  • 1/4 medium onion, thinly sliced

Seasoning

  • 0.5 Tbsp oyster sauce
  • 0.5 Tbsp soy sauce
  • 0.3 Tbsp sugar (adjust to taste)
  • 0.5 Tbsp corn syrup (oligo당)
  • 0.5 Tbsp sesame oil
  • A pinch of sesame seeds
  • A pinch of black pepper

Cooking Instructions

Step 1

First, prepare the fish cakes. Cut them into your preferred bite-sized pieces, such as 1cm thick squares or strips. Thinly slice the onion or cut it into cubes.

Heat 1 tablespoon of cooking oil in a pan over medium heat. Add the cut fish cakes and stir-fry for about 1-2 minutes until they are lightly golden brown. This step makes the fish cakes chewier and removes excess oil for a better taste.

Once the fish cakes are lightly browned, add the sliced onion to the pan and stir-fry together. Continue to cook until the onion becomes translucent and slightly softened, about 1 minute.

When the onion is about halfway cooked, add 100ml of water to the pan. This helps prevent the seasonings from burning and allows the flavors to meld evenly with the fish cakes.

Once the water begins to boil, add all the prepared seasoning ingredients (oyster sauce, soy sauce, sugar, and pepper). Stir well to combine, then continue to stir-fry over medium heat until the sauce reduces and thickens.

As you stir-fry, when most of the liquid has evaporated from the pan, add the corn syrup. Stir for another 30 seconds to 1 minute to add a nice glaze. Taste and adjust the seasoning if needed, adding more soy sauce or sugar to your preference. Be careful not to make it too salty!

Just before turning off the heat, drizzle in the sesame oil for a nutty aroma, and sprinkle with sesame seeds to finish. Adding these at the end preserves their fragrance.
