Jinmichae Stir-Fry Ingredients

  • Dried Shredded Squid (Jinmichae) 150g
  • Minced Garlic 1 Tbsp
  • Vegetable Oil 2 Tbsp
  • Soy Sauce 2 Tbsp
  • Mirin (Rice Wine) 1 Tbsp
  • Mayonnaise 1 Tbsp
  • Water 2 Tbsp
  • Sugar 1/2 Tbsp
  • Oligosaccharide Syrup 1 Tbsp
  • Sesame Seeds, a pinch

Cooking Instructions

Step 1

First, prepare the dried shredded squid (Jinmichae), about 150g. Cut it into manageable pieces, roughly 5-7 cm long, as it can be a bit unwieldy if left too long. Heat 2 tablespoons of vegetable oil in a pan over medium heat. Add the shredded squid and stir-fry for about 1-2 minutes. This brief stir-fry helps to dry out the squid slightly, making it more tender. Be careful not to burn it.

Now it’s time to add the flavorful sauce! Add 1 tablespoon of minced garlic, 2 tablespoons of soy sauce, 1 tablespoon of mirin, 2 tablespoons of water, and 1/2 tablespoon of sugar to the pan. Maintain medium heat and stir continuously with a spatula, ensuring the sauce is well combined with the squid. It’s crucial to cook it until the seasoning is evenly coated onto the Jinmichae.

Once the squid begins to take on a nice soy sauce color, it’s time to add the mayonnaise. Stir in 1 tablespoon of mayonnaise. This ingredient adds a creamy richness and helps prevent the Jinmichae from becoming too tough, ensuring a delightfully tender bite.

Next, we’ll add the final touch for sweetness and a glossy finish. Add 1 tablespoon of oligosaccharide syrup (or corn syrup) to the pan. Stir quickly to combine everything evenly. The oligosaccharide adds a beautiful sheen and balances the flavors with a mild sweetness. Continue to stir-fry for about 30 seconds to 1 minute more, allowing the sauce to thicken slightly.
