Main Ingredients
  • 500g Chicken drumettes (approx. 12 pieces)
  • 200g Chicken breast
  • Milk, for soaking (approx. 200ml)

Chicken Marinade Ingredients
  • 2 Tbsp minced garlic
  • 1 Tbsp cooking wine (mirin or sake)
  • 2 Tbsp olive oil
  • Pinch of salt
  • Pinch of black pepper
  • Pinch of ginger powder (optional)

Savory Soy Glaze Ingredients
  • 1/2 stalk green onion, finely chopped
  • 1/2 Korean chili pepper, deseeded and finely chopped (adjust to taste)
  • 3-4 cloves garlic, thinly sliced
  • 4 Tbsp soy sauce
  • 2 Tbsp sugar
  • 2 Tbsp corn syrup (or honey)
  • 4 Tbsp mirin (sweet rice wine)
  • 1 tsp lemon juice
  • 8 Tbsp water

Cooking Instructions

Step 1

Rinse the 500g of chicken drumettes (about 12 pieces) under cold running water. Make a few shallow cuts on the surface of each drumette; this helps the glaze penetrate better for a more flavorful result.

Step 2

Place the prepared drumettes in a bowl and cover them with about 200ml of milk. Let them soak for 20-30 minutes to effectively remove any gamey odor. After soaking, discard the milk, rinse the drumettes under cold water, and pat them thoroughly dry with paper towels or let them drain in a colander.

Step 3

Add the 200g of chicken breast, cut into bite-sized pieces, to the drained drumettes. Add the marinade ingredients: 2 Tbsp minced garlic, 1 Tbsp cooking wine, 2 Tbsp olive oil, a pinch of salt, a pinch of black pepper, and a pinch of ginger powder (if using). Gently mix everything together to coat the chicken pieces. Let it marinate for 10-20 minutes while you prepare the soy glaze.

Step 4

Prepare the glaze ingredients. Finely chop the 1/2 stalk of green onion. Deseed and finely chop the 1/2 Korean chili pepper (adjust the amount based on your spice preference). Thinly slice the 3-4 cloves of garlic. In a separate bowl, combine 4 Tbsp soy sauce, 2 Tbsp sugar, 2 Tbsp corn syrup, 4 Tbsp mirin, 1 tsp lemon juice, and 8 Tbsp water. Stir well until the sugar is dissolved to create a perfectly balanced soy glaze.

Step 5

Heat 1-2 Tbsp of olive oil in a large skillet over medium heat. Add the marinated chicken drumettes and chicken breast pieces and pan-fry them until they are golden brown and lightly browned on all sides. This searing step adds a delicious depth of flavor.

Step 6

In a separate pot, pour in all the prepared soy glaze ingredients and bring it to a boil. If you feel the glaze might become too thick, you can add an extra 1-2 Tbsp of water. It will reduce and thicken as it cooks anyway.

Step 7

Once the chicken pieces are nicely browned in the skillet, carefully pour the simmering soy glaze from the pot over the chicken.

Step 8

Reduce the heat to medium-low. Cover the pot with a lid and let the chicken simmer in the glaze, allowing it to absorb the flavors. If you don’t have a lid, you can use parchment paper to cover the pot, which helps trap steam and prevent the glaze from burning. Stir occasionally to ensure even coating and cooking.

Step 9

Continue to simmer for another 10-15 minutes, or until the glaze has thickened and coats the chicken beautifully, giving it a glossy sheen. The sauce will reduce further, infusing the chicken with its rich, savory flavor.
