Cooking Instructions
Step 1
Let’s make these incredibly delicious, sweet and savory soy-glazed chicken drumettes that everyone will love! They’re perfect as a side dish or a fantastic snack. ♬♪
Step 2
Rinse the chicken drumettes thoroughly under cold running water to remove any impurities.
Step 3
To help remove any gamey odor and tenderize the chicken, prepare about 1/2 cup of soju (Korean distilled spirit) using a standard drinking cup.
Step 4
Bring water to a boil in a pot, add the chicken drumettes and soju, and blanch for about 3 minutes. This step effectively removes impurities and any unwanted smells.
Step 5
After blanching, immediately rinse the drumettes again under cold water to wash away any remaining impurities.
Step 6
Drain the rinsed drumettes well using a sieve. It’s important to remove excess water to prevent oil splattering during the cooking process.
Step 7
Trim the hard ends off the whole garlic cloves. Chop the green onion into roughly 5cm (2-inch) pieces, or slice them finely according to your preference.
Step 8
Now, let’s prepare the star of the dish – the delicious braising sauce! In a bowl, combine 5 Tbsp soy sauce, 1 Tbsp sugar, 2 Tbsp mirin, 1 Tbsp plum extract, 1 Tbsp minced garlic, a pinch of black pepper, and 1 cup of water. Stir well until the sugar is dissolved. (Measurements are based on a standard Korean soup spoon.)
Step 9
Heat a pan over medium heat and add the drained chicken drumettes. Sear them on both sides until they are golden brown and slightly colored. This gives them a beautiful appearance when braised.
Step 10
Don’t worry if the drumettes aren’t cooked through at this stage. The goal here is just to get a nice sear and some color on the outside. They will cook completely in the sauce. 🙂
Step 11
In a deep pan or pot, add the seared chicken drumettes, the prepared braising sauce, and the chopped green onions and garlic cloves. If using, add the Cheongyang peppers now.
Step 12
Cover the pan and simmer over medium-low heat. Stir the drumettes occasionally to ensure they are evenly coated with the sauce. Braise until the sauce has reduced and thickened, about 15-20 minutes. Turn them occasionally to coat evenly.
Step 13
Finally, stir in 2 Tbsp of oligodang (or corn syrup/maltose) and continue to simmer for another 1-2 minutes, gently mixing, until the sauce is glossy. This adds a beautiful sheen and a final touch of sweetness.
Step 14
Transfer the perfectly braised soy-glazed chicken drumettes to a serving dish. Sprinkle with sesame seeds for a beautiful garnish. Your delicious dish is ready! 😀
Step 15
These sweet and savory soy-glazed chicken drumettes are an absolute winner, whether served as a delightful dish for kids or a satisfying snack with drinks. Enjoy!
