I recently bought some kabocha squash and thought about making pumpkin porridge for my sons. However, I wanted to try something new and decided to make ‘Pumpkin Egg Gratin.’ While I usually try to limit cheese, when I do use it, I prefer to be generous for a richer flavor. That’s why I added plenty of cheese to this Pumpkin Egg Gratin, which made it even more delicious. My sons absolutely loved it! It’s not only delicious but also very filling, making it a perfect portion for three people. This is a taste kids will adore – Pumpkin Egg Gratin! Enjoy this delightful dish^^

Main Ingredients

  • 1 Kabocha Squash
  • 3 Eggs
  • 1/3 can Sweet Corn (drained)
  • Mozzarella Cheese (to taste)
  • 2 slices American Cheese

  • Black Pepper (to taste)

Cooking Instructions

First, drain the canned corn and give it a quick rinse under running water. This helps remove any can-like taste and ensures a cleaner flavor.

Wash the kabocha squash thoroughly under running water. Place the washed squash on a microwave-safe plate, cover it loosely (leaving a gap for steam to escape), and microwave for about 3-5 minutes. This will partially cook the squash, making it much easier to scoop out the insides.

Carefully cut the microwaved squash in half. Using a knife, cut off the top portion to create a ‘lid.’ Then, use a spoon to scoop out the seeds and stringy pulp from the center. Be gentle to avoid breaking the squash, and don’t scoop too deeply.

Fill the hollowed-out kabocha squash with the prepared corn. Crack the eggs directly into the squash cavities. Season the eggs lightly with salt and pepper. Generously top with mozzarella cheese and the slices of American cheese. Feel free to add other cheeses like cheddar if you like!

Carefully place the cut ‘lid’ back on top of the filled squash. Place the assembled pumpkin on a microwave-safe dish and microwave for another 5-8 minutes, or until the eggs are set and the cheese is melted and bubbly. Microwave times can vary, so adjust as needed.

Carefully remove the hot Pumpkin Egg Gratin from the microwave and serve immediately. This dish looks as delicious as it tastes, and enjoying it while it’s warm will bring out the best flavors.
