  • 170g Kabocha Squash (or Pumpkin)
  • 3 Hard-boiled Eggs
  • 2 handfuls Cabbage (approx. 100g)
  • 1 Tbsp Whole Grain Mustard
  • 2 Tbsp Mayonnaise

Wash the kabocha squash, remove the seeds, and place it in a microwave-safe container. Cover with plastic wrap or a lid and microwave for about 10 minutes, or until fork-tender. Mash the cooked squash with a fork to create a smooth puree. (Microwave cooking time may vary based on your appliance.)

Prepare 3 fresh hard-boiled eggs. Using pre-cooked eggs will make the preparation even quicker.

Peel the hard-boiled eggs and mash them thoroughly with a fork until no large lumps remain. It’s important to mash them well so the yolk and white are evenly distributed.

Wash the cabbage, pat it dry, and then finely shred or mince it. You can leave it slightly coarser if you prefer a bit of crunch.

In a large bowl, combine the mashed kabocha squash, mashed hard-boiled eggs, and the prepared shredded cabbage. Add 1 tablespoon of whole grain mustard for an extra layer of flavor.
