- Water 3 cups
- Turmeric powder, a pinch
Pork Belly Teriyaki Stew Ingredients- Pork belly 500g
- Garlic 10 cloves (whole or sliced)
- Onion 1/2 (thinly sliced)
- Perilla leaves (깻잎) 3 sheets (thinly julienned)
- Pork belly 500g
- Garlic 10 cloves (whole or sliced)
- Onion 1/2 (thinly sliced)
- Perilla leaves (깻잎) 3 sheets (thinly julienned)
Cooking Instructions
Step 1
First, let’s cook the rice perfectly. Add 3 cups of water to 3 cups of jasmine rice and a pinch of turmeric powder for color and aroma. Cook the rice in your rice cooker until fluffy. Note that Thai jasmine rice may absorb less water than regular rice, so adjust accordingly. Once cooked, gently fluff the rice with a spatula and let it steam for a bit.
Step 2
Prepare the vegetables for the dish. Slice the 10 garlic cloves thinly or mince them. Thinly slice the 1/2 onion into strips. Wash the 3 perilla leaves and julienne them finely for garnish.
Step 3
Now, let’s make the delicious teriyaki sauce. In a bowl, combine 3 Tbsp of teriyaki sauce, 1 Tbsp of Kecap Manis, 1 Tbsp of soy sauce, 1 Tbsp of honey, 1 Tbsp of sake, and 1 Tbsp of mirin. Whisk together until well combined. This creates a perfectly balanced, savory-sweet sauce.
Step 4
It’s time to cook the pork belly beautifully. Cut the 500g of pork belly into bite-sized pieces. Heat a little olive oil in a pan over medium heat and cook the pork belly until golden brown. Sprinkle with black pepper to remove any gamey odors. You can gently dab away excess rendered fat with a paper towel as it cooks for a crispier result.
Step 5
Once the pork belly is nicely browned, add the sliced onions and garlic to the pan and stir-fry them together. When the onions begin to turn translucent, pour in the prepared teriyaki sauce. Simmer over medium-low heat, adding a knob of butter to enhance the richness and flavor. Let the sauce reduce and coat the pork belly and vegetables evenly. Your delicious pork belly teriyaki stew is now ready.
Step 6
Using the cooked turmeric rice, let’s make fried rice. Heat olive oil in a pan and add the rice. Season lightly with salt if desired (since the teriyaki stew is savory, keep the rice seasoning mild). Break up any clumps of rice with a spatula and stir-fry until well combined and heated through.
Step 7
Arrange the finished pork belly teriyaki stew and turmeric garlic fried rice attractively on a serving plate. Top with the julienned perilla leaves for a beautiful presentation and an added layer of fresh flavor. Enjoy this special, restaurant-quality meal that truly captures the essence of Southeast Asian cuisine!
