Cooking Instructions
Step 1
First, prepare the vegetables that will add texture and flavor to your oyster rice bowl. Thinly slice half an onion. Julienne about 30g of carrot. Cutting the vegetables into uniform strips will ensure they cook evenly and maintain a pleasant crispness.
Step 2
Next, let’s clean the fresh oysters. Gently rinse them under cold water two to three times while wearing gloves. Carefully inspect for any shell fragments and remove them if found. Be gentle to avoid damaging the delicate oysters.
Step 3
Now, let’s make the delicious sauce for the oyster rice bowl. In a saucepan or skillet, combine 1.5 tablespoons of sugar, 3 tablespoons of soy sauce, 2 tablespoons of mirin (or cooking sake), and 1/2 cup (100ml) of water. Stir over medium heat until the sugar is completely dissolved. Bring the sauce to a simmer, then reduce the heat slightly.
Step 4
While the sauce is simmering, add the julienned onion and carrot to the pan. Cook until the vegetables begin to soften, but still retain a slight bite. They should become slightly translucent and fragrant. Avoid overcooking, as you want to keep some of their crispness.
Step 5
Once the vegetables are tender-crisp, add the cleaned oysters to the pan. Stir them gently into the sauce and vegetables. Cook just until the oysters change color and are lightly cooked through. Overcooking oysters can make them tough, so be brief.
Step 6
Finally, crack one egg into the pan. Gently whisk the egg into the mixture, allowing it to cook through and bind the ingredients. Once the egg is set, turn off the heat. Serve the oyster and vegetable mixture generously over a bowl of warm cooked rice.
Step 7
Your delicious oyster rice bowl is ready! This recipe has a noticeable sweetness, which is often a hit with children. For adult palates, you might prefer to slightly reduce the sugar or add a touch more soy sauce. Feel free to use two eggs or cook the egg to your preferred doneness (e.g., slightly runny). The combination of crisp vegetables, tender oysters, and the sweet-savory sauce makes for an incredibly satisfying meal!
