Cooking Instructions
Step 1
First, gather all the ingredients needed to make delicious Yeab-bap.
Step 2
Rinse the glutinous rice thoroughly under running water. Place it in a bowl and soak for about 1 hour. Soaking the rice is the secret to achieving a chewy and flavorful texture.
Step 3
Wash the assorted beans (kidney beans, tiger beans, black beans, chickpeas) and prepare them. You don’t need to soak them separately before cooking.
Step 4
Place all the prepared beans into the inner pot of the Cuckoo pressure cooker. Add 3 cups (600ml) of water. Adjust the water level to the ‘3’ marking on the inner pot.
Step 5
While beans for Yeab-bap are typically soaked beforehand, using the Cuckoo Twin Pressure Cooker simplifies this. Simply select the ‘Mixed Grains’ menu and press the ‘High Pressure Cook’ button. This will cook the beans tenderly without pre-soaking. The Cuckoo Twin Pressure Cooker’s high and low pressure functions make cooking various dishes much more convenient and faster.
Step 6
While the beans are cooking, peel the chestnuts and cut them into bite-sized pieces. Cutting them into smaller pieces makes them easier for everyone, including children, to enjoy.
Step 7
Wash the dates, remove the pits, and slice them thinly into strips. These will add color and enhance the flavor of your Yeab-bap.
Step 8
Once the bean cooking cycle is complete, use a rice paddle to stir the cooked beans gently.
Step 9
Now, add the soaked glutinous rice, cut chestnuts, sliced dates, raisins, 1 Tbsp soy sauce, a pinch of salt, and a pinch of cinnamon powder to the inner pot. Finally, add 1.5 cups (300ml) of water.
Step 10
Close the lid of the Cuckoo Twin Pressure Cooker. Turn the lid handle to set it to ‘High Pressure’ mode. Then, select the ‘High Pressure Steam’ menu and press ‘Set’ to adjust the cooking time to 30 minutes. You can easily switch between high and low pressure settings using the lid handle, which is very convenient.
Step 11
While the Yeab-bap is cooking, let’s prepare the toppings. Get 2 pitted dates and some sunflower seeds ready.
Step 12
Remove the pits from the prepared dates and roll them up to create beautiful flower shapes. They will make your Yeab-bap look even more appealing.
Step 13
When the Yeab-bap cooking is finished, use the rice paddle to mix everything thoroughly, ensuring the glutinous rice, beans, chestnuts, and raisins are evenly distributed. Your delicious Mixed Bean Yeab-bap is now complete!
Step 14
Transfer the well-mixed Yeab-bap into a square mold while it’s still warm. Lightly greasing the inside of the mold with sesame oil will prevent the Yeab-bap from sticking, allowing for neat removal. Let the Yeab-bap cool in the mold in the refrigerator for about 1 hour before cutting and enjoying.
