This dish features mini pumpkins simmered in a savory soy sauce glaze, complemented by the nutty flavor of fresh peanuts and the natural sweetness of fresh sweet potatoes. It’s a perfect representation of autumn’s bounty, ideal as a side dish or a healthy snack.
Main Ingredients- 1 Mini pumpkin
- 1 Sweet potato (medium size)
- 1/2 to 1 cup Fresh peanuts (shelled)
Cooking Instructions
Step 1
Begin by thoroughly washing the mini pumpkin. Remove the stem and scoop out the seeds. Cut the pumpkin into bite-sized pieces, about 2-3 cm. Wash the sweet potato without peeling and cut it into similar-sized pieces as the pumpkin. Rinse the shelled fresh peanuts lightly under running water.
Step 2
Place the prepared mini pumpkin, sweet potato, and fresh peanuts into a pot. In a separate bowl, combine the soy sauce and kelp broth in a 1:2 ratio (e.g., 50ml soy sauce and 100ml kelp broth). Pour this mixture over the ingredients in the pot. Add 1 tablespoon of plum extract for a touch of sweetness and bring to a boil over medium-high heat.
Step 3
Once the mixture starts boiling, reduce the heat to medium and simmer, stirring occasionally, to allow the flavors to meld. When the sweet potatoes are almost tender (about 10-15 minutes), lower the heat to low. Stir in 1-2 tablespoons of oligosaccharide to add sweetness and a glossy finish. Turn off the heat, drizzle with a pinch of sesame oil, and sprinkle with toasted sesame seeds for a delightful finish.
