Sweet & Savory Dried Shredded Squids (Jinmichae) with Soy Sauce Glaze
The Ultimate Korean Comfort Side Dish: Soy-Glazed Dried Shredded Squids!
We’ve created a delicious, kid-friendly sweet and savory soy sauce-based side dish using dried shredded squids (Jinmichae). It’s a perfect banchan (side dish) that pairs wonderfully with rice!
Main Ingredients
- 300g dried shredded squids (Jinmichae)
- 2 Tbsp mayonnaise
Soy Sauce Glaze
- 3-4 Tbsp soy sauce (jin-ganjang)
- 1 tsp oyster sauce
- 2-3 Tbsp oligodang (corn syrup)
- 1 tsp minced garlic
- A pinch of black pepper powder
- 1 Tbsp rice wine (or cooking wine)
- 1 Tbsp sesame oil
- A sprinkle of toasted sesame seeds
- 3-4 Tbsp soy sauce (jin-ganjang)
- 1 tsp oyster sauce
- 2-3 Tbsp oligodang (corn syrup)
- 1 tsp minced garlic
- A pinch of black pepper powder
- 1 Tbsp rice wine (or cooking wine)
- 1 Tbsp sesame oil
- A sprinkle of toasted sesame seeds
Cooking Instructions
Step 1
Prepare the dried shredded squids (Jinmichae). Cut them into bite-sized pieces, about 5-7 cm long, using scissors or a knife. This helps the sauce coat evenly and makes them easier to eat.
Step 2
Add 2 tablespoons of mayonnaise to the cut Jinmichae. Gently mix and coat the squids with your hands. Pre-coating with mayonnaise helps prevent the squids from becoming too tough and allows the sauce to penetrate better.
Step 3
Now, let’s make the delicious soy sauce glaze! In a small bowl, combine 3-4 tablespoons of soy sauce, 1 teaspoon of oyster sauce, 2-3 tablespoons of oligodang (corn syrup), 1 teaspoon of minced garlic, a pinch of black pepper powder, and 1 tablespoon of rice wine (or cooking wine). Stir well until the sugar is dissolved. You can adjust the amount of soy sauce and oligodang to suit your personal preference for saltiness and sweetness.
Step 4
Heat a pan over medium heat. Pour in all the prepared soy sauce glaze. Once it comes to a boil, let it simmer for a moment until it slightly thickens. A slightly reduced glaze will be even more flavorful.
Step 5
When the glaze is bubbling, add the mayonnaise-coated Jinmichae to the pan. Stir-fry quickly over high heat, tossing to ensure the glaze coats the squids evenly. Be careful not to burn them, and stir-fry for about 1-2 minutes.
Step 6
Finally, transfer the glazed Jinmichae to a serving plate. Drizzle with 1 tablespoon of sesame oil and sprinkle with toasted sesame seeds for a perfect finish! This dish is incredibly delicious served over warm rice.
