While spicy stir-fried dried shredded squid is delicious, I discovered this soy sauce-based version for my children. It’s wonderfully sweet and savory, making it a perfect side dish or snack. Try this simple yet incredibly tasty recipe!

Main Ingredients
  • 100g dried shredded squid (Jinmichae)
  • 1/2 Tbsp sesame oil
  • A pinch of toasted sesame seeds

Seasoning Ingredients
  • 1 Tbsp minced garlic
  • 1 Tbsp mayonnaise
  • 1 Tbsp soy sauce
  • 1 Tbsp cooking wine (like Mirin)
  • 1/2 Tbsp sugar
  • 1 Tbsp corn syrup (or Oligodang)

Cooking Instructions

Step 1

First, lightly rinse the dried shredded squid under cold water. Be careful not to rinse for too long, as this can diminish the flavor. After rinsing, squeeze out as much excess water as possible with your hands. Then, cut the squid into bite-sized pieces, about 5-7 cm long, and set aside.

Step 2

In a pan, combine all the seasoning ingredients: minced garlic, mayonnaise, soy sauce, cooking wine, sugar, and corn syrup. Cook over medium-low heat, stirring constantly until the mixture thickens and becomes glossy. At this stage, you can taste the sauce. If it’s too salty, feel free to add a little more corn syrup. However, remember that the flavor will concentrate as it cooks, so it’s best to aim for a slightly less salty taste at this point.

Step 3

Once the sauce has thickened and is simmering, reduce the heat to very low or turn it off briefly. Add the prepared dried shredded squid to the pan. Gently toss the squid with your hands to ensure it’s evenly coated with the sauce, making sure every strand is covered.

Step 4

After the squid is coated with the sauce, place the pan back over low heat. Stir continuously to prevent burning and to allow the sauce to absorb into the squid. Stir-fry for about 1-2 minutes until the flavors meld.

Step 5

As you stir-fry, the sauce will penetrate the squid, and most of the moisture will evaporate, leaving a beautiful glossy finish. The color will also deepen to a more appetizing shade.
