  • 600g Radish (about 1/4 medium)
  • 1/4 stalk Green Onion
  • 1 Cheongyang Pepper (spicy chili pepper)
  • 1 Red Chili Pepper
  • 800ml Water
  • A pinch of Sesame Seeds

Seasoning Ingredients
  • 1 Tbsp Sugar
  • 3 Tbsp Gochugaru (Korean chili powder)
  • 5 Tbsp Soy Sauce (jin ganjang)
  • 1 Tbsp Mirin (rice wine)
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Perilla Oil (deulgireum)

Cooking Instructions

Step 1

First, let’s prepare the vegetables. Finely chop the green onion. Slice the Cheongyang pepper and red chili pepper diagonally for a touch of spiciness and vibrant color. You can remove the seeds if you prefer less heat.

Wash the radish thoroughly and then cut it into slices about 1.5cm thick. Cutting the radish too thick will make it take longer to cook, so it’s best to slice it into an appropriate thickness for easy eating. Softer, well-cooked radish will absorb the flavors beautifully.

Now, let’s start braising. Place the sliced radish at the bottom of the pot. Pour in the measured 800ml of water.

Add all the seasoning ingredients for braising along with the radish. Measure and add 1 Tbsp sugar, 3 Tbsp gochugaru, 5 Tbsp soy sauce, 1 Tbsp mirin, and 1 Tbsp minced garlic.

Using a spatula, gently mix the seasonings until well combined, then bring to a boil over high heat. Once boiling, reduce the heat to medium and let it simmer covered for about 20 minutes, allowing the radish to become tender. The key is to wait until the radish is soft.

Depending on the size of your pot and the intensity of the heat, the amount of water evaporated may vary. After 20 minutes, check the radish; if it’s still firm or the liquid is too abundant, continue simmering for another 5 to 10 minutes to soften the radish further and adjust the sauce consistency. Be careful not to let it reduce too much.

Once the radish is tender, open the can of tuna, drain the oil thoroughly, and add it to the pot. Draining the oil will result in a cleaner, more delicate flavor.

Gently mix the tuna with the seasonings to ensure it’s well combined, then reduce the heat to medium-low and simmer for another 10 minutes. During this time, the umami from the tuna will infuse into the radish. If the sauce has become too thick, add a little water. If the seasoning is not to your taste, you can add a little more sugar or soy sauce to adjust.

Step 9

Now, add the prepared green onion, Cheongyang pepper, and red chili pepper, and gently toss to combine. Avoid overcooking after adding the vegetables, as they can become mushy. Simmer briefly until the vegetables are just cooked through.

Turn off the heat and drizzle in 2 Tbsp of perilla oil for a rich aroma. The nutty fragrance of the perilla oil will enhance the overall flavor of the braised tuna and radish.
