Sweet & Savory Braised Potatoes with Onion

Main Ingredients- 2 medium potatoes
- 1/2 medium onion
- 1 Tbsp minced garlic
Seasoning Mix- 3 Tbsp soy sauce
- 2 Tbsp corn syrup (or rice syrup/oligosaccharide)
- 1 Tbsp cooking wine (like mirin)
- 1/2 cup water (approx. 100ml)

Cooking Instructions
Step 1
Peel the potatoes and cut them into 2-3 cm thick slices. (Avoid cutting them too thin, or they might break apart.) Slice the onion to a similar size as the potatoes. Place the sliced potatoes, onion, and minced garlic into a pan.
Step 2
Over medium-low heat, stir and sauté the ingredients in the pan until they are evenly coated. Sauté until the potatoes start to look translucent and are slightly cooked; this helps the seasoning penetrate better.
Step 3
Once the potatoes are fork-tender and slightly sautéed, add the corn syrup (or your preferred syrup) and cooking wine. Gently stir to combine the ingredients. This step will give the potatoes a glossy sheen and add a lovely sweetness.
Step 4
Now, pour in 1/2 cup of water and cover the pan with a lid. Let it simmer over medium-low heat until the potatoes are almost fully cooked. Occasionally lift the lid to check and prevent sticking, adding a little more water if needed.
Step 5
When the potatoes are nearly tender and cooked through, remove the lid and add the soy sauce. Allow it to sit for a moment to let the soy sauce begin to coat the ingredients.
Step 6
With the lid off, continue to simmer over medium-low heat, stirring occasionally, until the sauce thickens and coats the ingredients. Aim for a consistency where the sauce clings beautifully to the potatoes and onions.
Step 7
The dish is ready when the potatoes are fully cooked and the sauce has reduced to a rich, glossy coating. (If you prefer a touch of heat, you can finely chop 1-2 Korean green chili peppers and stir them in during this final simmering stage for an extra kick.)
