  • A pinch of toasted sesame seeds (for garnish)

Sauce Ingredients

  • 1 Tbsp Gochujang (Korean chili paste – add more if you prefer it spicier)
  • 2 Tbsp Jin Ganjang (Korean soy sauce – for umami and saltiness)
  • 1.5 Tbsp Corn syrup or Oligosaccharide (for shine and sweetness)

First, prepare the garlic cloves. If any garlic cloves are particularly large, cut them in half or into thirds to ensure the sauce coats them evenly. Heat a pan over medium heat and add a generous amount of cooking oil. Add all the prepared garlic cloves to the pan.

Cook the garlic over low heat, stirring frequently to prevent burning. As the garlic turns golden brown, it will develop a subtle sweetness. It’s important to cook it thoroughly until it’s almost browned but not burnt.

Once the garlic is sufficiently cooked, turn off the heat. Push the sautéed garlic to one side of the pan. In the empty space, add all the sauce ingredients: gochujang, jin ganjang, and corn syrup.

Turn the heat back on to low. Gently mix the garlic and the sauce ingredients together with a spatula. Continue to simmer and stir until the sauce coats the garlic evenly. The key is to keep stirring to prevent anything from sticking or burning.
