- 1-2 Dried red chili peppers (Peperoncino, adjust to taste)
- A touch of Sesame oil

Step 1
Make 2-3 shallow cuts along the length of each chicken drumette, down to the bone. Then, firmly push the meat towards the tip of the bone and flip it over to create a nicely shaped piece. This technique not only makes the drumettes look appealing but also makes them easier to eat later. It helps the drumettes look prettier and absorb the sauce better.
Step 2
Combine all the marinade ingredients with the prepared chicken drumettes and mix well. The minced garlic, salt, black pepper, olive oil, and mirin will effectively remove any gamey odor from the chicken. Since chicken can be bland without proper seasoning, marinating with salt beforehand, even for a braised dish, will result in a much richer and more delicious flavor.
