- 1/4 medium pumpkin
- 1 sweet potato
- 1/2 apple
- A small amount of broccoli
- 1/2 onion
- 2 tomatoes
- 2 plain yogurts
- 1 cup curry powder

Cooking Instructions
Step 1
Begin by heating a generous amount of cooking oil in a pot over medium-low heat. Add the finely chopped onion and sauté for at least 10 minutes. During this time, add a pinch of salt and garlic powder to enhance the onion’s natural sweetness and develop flavor. Continue sautéing until the onions become translucent and release a sweet aroma.
Step 2
Once the onions are nicely softened, add the pumpkin and sweet potato, cut into bite-sized pieces, and sauté them together. Next, add the sliced apple and continue to sauté until it softens slightly, adding its sweetness to the mix. When the vegetables are partially cooked, stir in the curry powder. Step 3
After the vegetables are well coated with the curry powder, add the chopped tomatoes, plain yogurt, and about 100ml of water. Cover the pot and let it simmer gently over low heat for at least 10 minutes, or until all the ingredients are thoroughly tender. Towards the end, add the broccoli florets, cut into manageable pieces, and cook them until they are bright green and tender-crisp.
