Ingredients
  • Mashed cooked pumpkin 1 cup
  • Creamy spaghetti sauce 1 cup
  • Shrimp (about 6 medium-sized)
  • Minced garlic 1 Tbsp
  • Fresh spinach 1 handful
  • Whole grain mustard 1 Tbsp
  • Salt 4 pinches
  • Pepper 3 pinches
  • Mozzarella cheese 3 Tbsp

Cooking Instructions

Step 1

First, wash the pumpkin thoroughly and steam it for about 20 minutes, or until a skewer or fork can easily pierce it. Once cooked, let it cool slightly, peel off the skin, and mash it with a fork or potato masher until smooth. Steaming with the skin on helps retain the pumpkin’s natural sweetness.

Step 2

Heat a lightly oiled pan over medium heat. Add the 6 shrimp and sauté them with 1 Tbsp minced garlic, 1 pinch of salt, and 1 pinch of pepper. Cook until the shrimp turn pink and are almost cooked through. The garlic should become fragrant.

When the shrimp are about halfway cooked, add the handful of fresh spinach to the pan. Sauté with the shrimp just until the spinach wilts. This should only take a minute or two.

Pour in 1 cup of creamy spaghetti sauce. Stir everything together well to combine the shrimp, spinach, and sauce. Let it simmer briefly to allow the flavors to meld.
