Main Ingredients

  • 1/2 medium pumpkin
  • 5 Tbsp glutinous rice, soaked (approx. 50g)
  • 3 cups water (720ml)
  • 2 Tbsp cooked kidney beans or tiger beans

Seasoning

  • 1.5 pinches salt (adjust to taste)
  • 1 Tbsp sugar (adjust based on pumpkin’s sweetness)

Cooking Instructions

First, prepare the pumpkin. Scoop out the seeds and stringy insides. Peel the pumpkin and cut it into bite-sized cubes (about 2-3 cm). If the peel is too tough to cut, you can microwave the pumpkin for about 30 seconds before cutting; this will soften it and make it much easier to handle. Always be careful not to cut yourself while chopping.

In a wide pot, combine the prepared pumpkin and the pre-soaked glutinous rice. Soaking the glutinous rice beforehand will result in a smoother texture and a creamier porridge.

Pour in 3 cups (720ml) of water. Bring to a boil over high heat, then reduce to medium-low heat and simmer gently for 15-20 minutes, or until the pumpkin and rice are very tender. If you prefer a thinner consistency, feel free to add a little more water. The key is to cook until everything is soft and mushy.

Prepare the beans to add to the porridge. If you have cooked kidney beans or tiger beans, rinse them well. (If using frozen beans, thaw them before adding.)

Check if the pumpkin and glutinous rice are fully cooked and tender. They should be easily mashable with a spoon.

To achieve a smooth texture, transfer the cooked mixture to a blender or use an immersion blender. Blend until you reach your desired consistency. Be cautious when blending hot ingredients; let it cool slightly before blending or ensure your blender is safe for hot liquids.

Add the cooked beans, sugar, and salt to the blended pumpkin mixture. Stir well to combine. Adjust the amount of sugar and salt according to the natural sweetness of your pumpkin and your personal preference. You can add a little more sugar if you like it sweeter, or a tiny bit more salt to enhance the sweetness.

Once all ingredients are mixed, simmer for another 5 minutes to allow the beans to cook through and the flavors to meld beautifully. Serve warm and enjoy your delicious pumpkin porridge!
