Here’s a simple recipe for delicious and satisfying sweet pumpkin pancakes using just one pumpkin. Perfect for a quick snack or light meal, these pancakes are naturally sweet and wonderfully comforting!

  • 1 medium pumpkin (about 1 kg)

  • Pancake mix (buchim garu), as needed (adjust to your preference)
  • Cooking oil, for frying (generous amount)

Cooking Instructions

First, thoroughly wash the pumpkin. Peel off the skin, cut it into manageable pieces, and carefully scoop out and discard the seeds and stringy bits. Set aside about 3/4 of the pumpkin flesh to be pureed, and thinly slice the remaining 1/4 into matchsticks. To puree, place the pumpkin pieces in a blender with a few tablespoons of water (this helps it blend smoothly) and process until you have a smooth consistency. The sliced pumpkin will add a lovely texture.

In a large mixing bowl, combine the pureed pumpkin and the sliced pumpkin. Gradually add the pancake mix, stirring as you go. Add a little water if needed, until you achieve a thick, ladle-able batter. The batter should be thick enough to hold its shape but still pourable. It shouldn’t be too runny or too stiff – aim for a consistency similar to thick pancake batter.

Heat a generous amount of cooking oil in a non-stick skillet over medium-low heat. Spoon portions of the batter into the pan, spreading them out into round, flat shapes. Let them cook gently; you’ll know it’s time to flip when the edges start to look slightly translucent and set, and the bottom is lightly golden.

Carefully flip the pancakes and cook the other side for another 1-2 minutes, or until golden brown and cooked through. Continue this process with the remaining batter. Once both sides are beautifully golden, your delicious sweet pumpkin pancakes are ready! They are best enjoyed warm, offering a delightful combination of sweetness and a satisfyingly tender texture.
