Ingredients

  • 1 medium sweet potato
  • 2 Tbsp sugar
  • 2 Tbsp water
  • 2 Tbsp corn syrup (or rice syrup/oligosaccharide)
  • A pinch of black sesame seeds or toasted sesame seeds (for garnish)
  • A little cooking oil (for greasing the baking pan)

Cooking Instructions

Step 1

Wash the sweet potato thoroughly. You can peel it or leave the skin on. Cut it into bite-sized pieces, about 2-3 cm thick. Soak the cut sweet potato pieces in cold water for about 5 minutes to remove excess starch. This helps create a crispier texture. Drain the sweet potato pieces well. Lightly grease an oven pan or air fryer basket with cooking oil and arrange the sweet potato pieces in a single layer. Bake in a preheated oven or air fryer at 200°C (400°F) for about 10-15 minutes, or until the surfaces of the sweet potatoes are slightly golden.

In a separate pan or small pot, combine the sugar and water in equal amounts (2 Tbsp each). Add the corn syrup (or rice syrup/oligosaccharide) (2 Tbsp). Place this mixture over low heat. Cook without stirring until the sugar has completely dissolved and the mixture begins to form a syrup. It’s important not to stir during this stage. Keep the heat on medium-low to low, and let it simmer for about 4-5 minutes until the syrup thickens slightly. Be careful not to overcook, as it can burn.

Carefully add the baked sweet potato pieces to the warm syrup. Using a spoon or spatula, gently toss and coat the sweet potatoes evenly with the syrup. Make sure each piece is well-coated.

Turn off the heat. Sprinkle the black sesame seeds or toasted sesame seeds over the coated sweet potatoes for garnish. This adds a nutty flavor and visual appeal. Let the sweet potato treats cool slightly before serving. They are delicious warm, but the syrup coating becomes slightly firmer as they cool.
