Introducing a simple yet satisfying breakfast option: ‘Sweet Potato Stuffed Onion Bake’. This dish features tender baked onions generously filled with sweet mashed sweet potatoes. Main Ingredients- 1 Onion (large, suitable for hollowing out)
- 1 Boiled Sweet Potato (medium-sized, cooked until fluffy)
- 2 Tbsp Mozzarella Cheese (adjust to your preference)

Cooking Instructions
Step 1
First, peel the skin off the pre-boiled sweet potato. Place it in a bowl and mash it thoroughly with a fork or potato masher until smooth. Mix in 1 tsp of mayonnaise and a pinch of salt to prepare the sweet potato filling.

Blend the mashed sweet potato, mayonnaise, and salt until well combined. You’ll have a smooth and moist sweet potato filling.

Now, prepare the onion. Peel off the outer skin of 1 onion and wash it thoroughly under running water. Trim the very bottom (root end) of the onion so it sits flat and stable when baking. Using a paring knife, make a circular cut around the top (stem end) and carefully scoop out the inner layers with a spoon or small scoop to create an onion cup. Be careful not to scoop out too thinly.

Place the hollowed-out onion onto an oven tray or air fryer basket. Generously fill the onion cup with the prepared sweet potato mixture. Gently press the top with a spoon to level the filling and prevent it from spilling out.
