For the Chewy Dough
  • 300-500g all-purpose or bread flour
  • 1/2 cup warm water (approx. 100ml)
  • 1/2 Tbsp sugar
  • 1 Tbsp olive oil
  • 1/2 Tbsp salt
  • 1/2 Tbsp instant dry yeast

For the Sweet Potato Mousse
  • 2 medium sweet potatoes
  • 1/2 cup milk (approx. 100ml)
  • Honey or corn syrup to taste

For the Savory Onion Sauce
  • 1 medium onion
  • 1/2 Tbsp minced garlic (or 1-2 cloves garlic)
  • 3 Tbsp sugar
  • Mayonnaise to taste (approx. 3-4 Tbsp)

For the Toppings
  • 200g mozzarella cheese (adjust to preference)
  • 10-12 strips bacon, cut into pieces
  • 1-2 button mushrooms, thinly sliced
  • 50-80g canned corn kernels, drained
  • A little olive oil for greasing

Cooking Instructions

Step 1

First, let’s make the pizza dough! In a large bowl, combine the flour, sugar, salt, and yeast. Make a well in the center and pour in the warm water and olive oil. Mix with your hands or a spatula until a cohesive dough forms. Knead the dough vigorously for about 10 minutes until it becomes smooth and elastic. (Add a tiny bit more flour if the dough is too sticky.) Place the kneaded dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for 4-6 hours, or until doubled in size. This is the first proof.

Step 2

While the dough is proofing, let’s prepare the star of our pizza: the sweet potato mousse. Wash and peel the sweet potatoes, then cut them into manageable pieces. Place them in a pot, cover with water, and boil until tender. You can check for doneness by inserting a fork; it should go in easily.

Step 3

Once cooked, drain the sweet potatoes and mash them while they are still warm. Stir in the milk and honey (or corn syrup) until you achieve a smooth and sweet mousse consistency. Transfer this mixture into a piping bag or a plastic bag with a corner snipped off for easy application.

Step 4

Now, let’s make the flavorful onion sauce. Peel the onion and chop it roughly. This makes it easier for the blender to process.

Place the chopped onion, minced garlic, sugar, and mayonnaise into a blender or food processor. The mayonnaise adds richness and helps achieve the desired sauce consistency, so adjust it according to your preference.

Step 6

Secure the lid of the blender and process until the mixture is completely smooth and finely pureed. It’s important to achieve a creamy texture without any chunks.

Now it’s time to assemble and cook the pizza! After the first proof, punch down the dough to release the air, shape it into a ball, and let it rest for 10 minutes. Then, use a rolling pin to flatten it into your desired shape and thickness – a classic circle or a rustic square both work wonderfully! 2. Lightly grease a frying pan with olive oil and heat it over medium-low heat. Place the flattened dough onto the pan. Once the bottom side is lightly golden brown, flip it over and get ready to add your toppings!

Step 9

Spread the sweet potato mousse evenly over the dough, followed by your chosen toppings like bacon, mushrooms, and corn. Finish by generously sprinkling mozzarella cheese over everything. Once all toppings are in place, cover the pan tightly with a lid and cook over very low heat for about 15-20 minutes, or until the cheese is melted and bubbly, and the crust is cooked through. Be patient and keep the heat very low to prevent the crust from burning.

Step 10

Voila! Your homemade sweet potato pizza is ready to be enjoyed! The golden crust, sweet potato mousse, and generous toppings combine for a truly delightful pizza. Let it cool slightly before slicing and savoring your creation!
