- 1-2 Tbsp oligosaccharide (or honey/maple syrup)

They are done when a fork or skewer easily pierces through.)

Adjust the amount of sweetener based on the natural sweetness of the potatoes – use 2 Tbsp if you like it sweeter, or 1 Tbsp for a moderate sweetness.)

When the sweet potato mixture reaches a smooth, pureed consistency, add a tiny pinch of salt to enhance the flavor. Mix well. The balance of sweet and salty will elevate the mousse’s taste.
