Sweet Potato Mochi Bread
Super Simple No-Flour Sweet Potato Mochi Bread (Air Fryer Version)
Using seasonal sweet potatoes, I made a mochi bread without flour. It’s a delightful, chewy treat that’s surprisingly easy to make!
Ingredients- 500g Sweet Rice Flour
- 3 Eggs
- 250ml Milk
- 150g Sugar
- 15g Baking Powder
- 500g Sweet Potato (cooked and mashed)
- 50g Sesame Seeds
- Nuts (to taste) – appropriate amount
- 5g Salt
Cooking Instructions
Step 1
Peel and boil the 500g of sweet potatoes until very tender. Drain them, then mash them thoroughly using a fork or masher while they are still warm. This ensures a smooth consistency for the dough.
Step 2
In a large bowl, combine the 3 eggs, 250ml milk, 150g sugar, 5g salt, 15g baking powder, and 50g sesame seeds. Whisk everything together until well combined and smooth, ensuring there are no lumps.
Step 3
Gradually add the 500g of sweet rice flour to the wet ingredients. Mix with a spatula or your hands until a dough forms. Knead the dough until it becomes cohesive and no dry flour remains. Be gentle but thorough.
Step 4
Once the dough has come together, gently incorporate the mashed sweet potato (about 500g) and your preferred amount of nuts. Continue to mix until the sweet potato and nuts are evenly distributed throughout the dough.
Step 5
Divide the dough into 5 equal portions. Lightly wet your hands or use a little oil to prevent sticking. Shape each portion into a round, flat disc about 1cm thick. You can make them slightly thicker for a chewier texture.
Step 6
Arrange the shaped mochi breads in your air fryer basket, ensuring they have some space between them. Set the air fryer to 170°C (340°F) and bake for 17 minutes. Carefully flip the breads and bake for another 15 minutes at 170°C (340°F) until golden brown and cooked through. Enjoy your delicious homemade sweet potato mochi bread! They are best enjoyed warm.
