Main Ingredients- 1 medium sweet potato
- 5 tablespoons sugar (adjust to taste)
- 3 tablespoons potato starch
- Shredded mozzarella cheese, as needed
- 3 tablespoons cooking oil
Cooking Instructions
Step 1
Wash the sweet potato thoroughly and steam it in a steamer basket with a lid for about 10-15 minutes. Starting with cold water helps the sweet potato cook evenly and become very soft inside. Test for doneness by piercing it with a chopstick; it should go in easily.
Step 2
While the sweet potato is still warm, peel off the skin. Place the peeled sweet potato in a bowl and mash it until smooth using a fork or a potato masher. Mashing while warm will yield a smoother texture.
Step 3
To the mashed sweet potato, add 1 tablespoon of sugar and 3 tablespoons of potato starch. Knead the mixture with your hands until it forms a cohesive, chewy dough. Mix thoroughly until all ingredients are well combined.
Step 4
Divide the dough into bite-sized portions and flatten them into round discs. Place about 1 tablespoon of shredded mozzarella cheese in the center of each disc. Carefully wrap the dough around the cheese, sealing it tightly to prevent leakage, and shape it into a round ball.
Step 5
Now, let’s make the delicious caramel sauce. Heat a non-stick pan over medium heat and add 3 tablespoons of cooking oil and 4 tablespoons of sugar. Stir continuously until the sugar completely dissolves and turns into a light caramel color. Be careful not to burn it; once it reaches a nice amber hue, reduce the heat to very low.
Step 6
Carefully add the prepared sweet potato balls to the pan with the melted caramel sauce. Gently toss them to coat evenly. Pan-fry over low heat, turning occasionally, until both sides are golden brown and slightly crispy. This creates the delightful contrast of textures.
Step 7
Transfer the cooked sweet potato tteok onto parchment paper and let it cool slightly. While delicious when warm, letting it cool a bit will enhance the crispy exterior and chewy interior. These are dangerously delicious sweet potato treats, with a crispy outside and a soft, gooey center that will captivate your taste buds!
Step 8
Once you have formed the sweet potato dough, heat a pan with oil over medium heat. Pan-fry the dough balls on both sides until golden brown and slightly crispy. This step ensures a nice crispiness on the outside while the cheese inside melts, making it even more delicious. (Note: This step can be combined with the caramel sauce step if preferred).
