Wash the sweet potato thoroughly and steam it in a steamer basket with a lid for about 10-15 minutes. Starting with cold water helps the sweet potato cook evenly and become very soft inside. Test for doneness by piercing it with a chopstick; it should go in easily.

While the sweet potato is still warm, peel off the skin. Place the peeled sweet potato in a bowl and mash it until smooth using a fork or a potato masher. Mashing while warm will yield a smoother texture.

To the mashed sweet potato, add 1 tablespoon of sugar and 3 tablespoons of potato starch. Knead the mixture with your hands until it forms a cohesive, chewy dough. Mix thoroughly until all ingredients are well combined.

Divide the dough into bite-sized portions and flatten them into round discs. Place about 1 tablespoon of shredded mozzarella cheese in the center of each disc. Carefully wrap the dough around the cheese, sealing it tightly to prevent leakage, and shape it into a round ball.

Now, let’s make the delicious caramel sauce. Heat a non-stick pan over medium heat and add 3 tablespoons of cooking oil and 4 tablespoons of sugar. Stir continuously until the sugar completely dissolves and turns into a light caramel color. Be careful not to burn it; once it reaches a nice amber hue, reduce the heat to very low.
