This is the salad you always find at the salad bar! It’s incredibly soft and melts in your mouth with a subtle sweetness. Made by mashing sweet potatoes, kabocha squash, and potatoes, this is a wholesome and nutty salad enhanced by the delightful crunch of almonds and cranberries. Main Ingredients- 2 medium sweet potatoes
- 1/3 kabocha squash
- 2 medium potatoes
- 2 Tbsp sliced almonds
- 2 Tbsp chopped walnuts
- 2 Tbsp dried cranberries
Dressing Ingredients- 3 Tbsp mayonnaise
- 3 Tbsp plain yogurt
- 2 Tbsp corn syrup (or honey)

Cooking Instructions
Step 1
First, thoroughly wash the sweet potatoes, kabocha squash, and potatoes. Peel the sweet potatoes and potatoes, then cut them into bite-sized pieces, about 2-3 cm. Remove the seeds from the kabocha squash and cut it into similar-sized pieces. Place the cut sweet potatoes, potatoes, and kabocha squash in a steamer basket in that order. Cover and steam for about 20 minutes until tender. They should be easily pierced with a fork.
Step 2
While the steamed vegetables are still warm, transfer them to a large bowl. Use a fork or a potato masher to mash them until smooth, ensuring there are no large lumps. It’s nice to leave some texture rather than mashing them completely smooth.
Step 3
Add the prepared nuts (sliced almonds, chopped walnuts) and dried cranberries to the mashed vegetables. Then, add the dressing ingredients: mayonnaise, plain yogurt, and corn syrup. Gently fold everything together to combine, being careful not to overmix and crush the vegetables.
Step 4
