Easy Homemade Sweet Potato Curry Recipe with Plenty of Onions

I personally prefer sweet potatoes over regular potatoes, so I’ve been eagerly awaiting the sweet potato season! I even bought some from the market before going camping and roasted them over a campfire – they were absolutely delicious. Today, I’m excited to share a special sweet potato curry that leverages this wonderful ingredient, adding sweetness and a rich flavor. By generously using onions, we achieve a deep, natural sweetness, and the soft, chewy sweet potatoes add a nutty richness. This is a delightful meal perfect for the whole family. Curry Ingredients
  • 2 medium sweet potatoes
  • 1/2 carrot
  • 2 medium onions
  • 100g pork (for curry)
  • 1 block firm curry roux (choose your favorite flavor)
  • 750ml water

Cooking Instructions

Step 1

First, prepare your vegetables. Peel the onions and slice them thinly into strips. Wash the sweet potatoes and carrot, peel them, and then cut them into uniform 2cm cubes. Ensuring the sweet potato pieces are similarly sized will help them cook evenly.

Step 2

Season the pork with a pinch of salt and pepper to remove any gamey odor. If you have time, let it marinate for a few minutes.

Step 3

Heat 1-2 tablespoons of cooking oil in a deep pan or pot. Add all the sliced onions and sauté over medium-low heat until they turn a deep golden brown. Caramelizing the onions this way significantly enhances the curry’s flavor and sweetness. Be patient – it’s worth it!

Step 4

Once the onions are nicely caramelized, add the seasoned pork and cook until it’s no longer pink. Then, add the cubed sweet potatoes and carrots. Stir-fry for another 2-3 minutes, allowing the vegetables to get lightly coated in the oil. This step helps develop a richer curry flavor.

Step 5

Pour in 750ml of water and bring to a boil over high heat. Once boiling, add the block of curry roux and stir well to dissolve it completely. Make sure to break up any clumps with a whisk or spoon.

Step 6

Reduce the heat to medium-low and continue to simmer, stirring occasionally to prevent sticking, until the curry thickens to your desired consistency. This usually takes about 5-10 minutes. Once thickened, your delicious sweet potato curry is ready to be served over a hot bowl of rice. Enjoy!
