- Pinch of whole black pepper
- 2 Tbsp cooking wine (like Mirin or Sake)
- 1 Tbsp minced garlic
- Pinch of salt
- Pinch of whole black pepper
- Milk (for soaking chicken) – a splash
- 1/2 cup heavy cream (approx. 200ml)
- 100ml milk
- 1/2 tsp salt
- Pinch of whole black pepper
Cooking Instructions
Step 1
Begin by preparing the chicken. Cut the chicken thighs into bite-sized pieces. This helps them absorb the marinade better and cook more evenly.
Step 2
Place the cut chicken in a bowl and pour in a splash of milk. Let it soak for about 10 minutes to tenderize the meat and remove any gamey odor. After soaking, drain the milk and add 2 tablespoons of cooking wine, 1 tablespoon of minced garlic, a pinch of salt, and a pinch of whole black pepper. Gently mix to coat the chicken and let it marinate for at least 15 minutes.
Step 3
Wash the sweet potato, bell pepper, onion, and carrot. Peel the sweet potato and carrot if desired. Dice all these vegetables into approximately 1.5cm cubes. Finely chop the green onion for garnish.
Step 4
Heat a little oil in a pot or deep skillet over medium-low heat. Add the minced garlic and sauté slowly until fragrant and lightly golden. Be careful not to burn the garlic, as this is key to developing a great aroma.
Step 5
Once the garlic is fragrant, add the marinated chicken pieces and stir-fry over medium-high heat until the outside is lightly browned. Then, add the diced onion, carrot, and bell pepper. Stir-fry quickly over medium-high heat to keep the vegetables crisp.
Step 6
Pour in the heavy cream and 100ml of milk. Bring to a simmer over medium heat. Add the diced sweet potato. Cover the pot and let it simmer gently for about 10-15 minutes, or until the sweet potato is tender. Stir occasionally to prevent sticking. Season with salt and pepper to taste.
Step 7
Your delicious Sweet Potato Cream Stew is ready, featuring tender chicken, sweet potatoes, and crisp vegetables! It’s wonderful served with warm crusty bread or poured over cooked spaghetti for a creamy pasta dish. This stew is also a fantastic way to feed the whole family, young and old, especially when served over rice. Garnish with chopped green onions before serving for a fresh finish.
