Hello everyone! This is Lara from Cooking & Recipes. Today, we’re making a nutritious and sweet sweet potato soup. We’ll also make croutons for a lovely garnish! The ingredients are rice bread, a little butter, 300g sweet potatoes, 420ml milk, 2 slices of cheese, and a pinch of salt. A sprinkle of parsley for decoration. This recipe is incredibly easy and perfect for a light yet filling meal.
Soup Ingredients- 300g Sweet Potatoes (about 1-2 medium-sized)

- 2 slices of Processed Cheese

Cooking Instructions
Step 1
First, let’s make the croutons that will add a delightful crunch to your sweet potato soup! Cut the rice bread into bite-sized cubes, about 1cm in size. Heat a little butter in a pan over medium-low heat, and toast the bread cubes until they are golden brown and crispy. Make sure to stir them occasionally to prevent burning. Your delicious croutons are ready!
Step 2
Now, it’s time to prepare the star of our soup: the sweet potatoes! Wash the sweet potatoes thoroughly. Steam them until they are very tender. (Alternatively, you can microwave them for a quicker cooking time.) Once cooked and soft, peel the sweet potatoes and place them in a pot. Add 350ml of the milk. Use a spatula or fork to mash the sweet potatoes until they are smooth and creamy. It’s important to mash them well to avoid lumps.
Step 3
Once the sweet potatoes and milk are well combined, place the pot over low heat and bring to a gentle simmer. If the soup seems too thick, gradually add the remaining 70ml of milk until you reach your desired consistency. As the soup begins to simmer, add the 2 slices of cheese and stir until they are completely melted. Finally, add a pinch of salt to season. Your smooth and sweet sweet potato soup is complete! Pour the warm soup into a bowl, garnish with the prepared croutons and a sprinkle of parsley flakes for a beautiful presentation. Enjoy your delicious soup!
