If you’re mindful of cholesterol levels, incorporating these sweet potato cheese balls into your diet could be beneficial. Main Ingredients
- 300g Sweet Potatoes (approx. 1-2 medium-sized)
- A little Starch (potato or cornstarch) (approx. 1-2 Tbsp)
- 70g Mozzarella Cheese (adjust to your preference)
- 50g Butter (softened at room temperature)
Cooking Instructions
Step 1
First, wash the 300g of sweet potatoes thoroughly. Place them in a pot, cover with enough water, and bring to a boil. Once boiling, reduce the heat to medium-low and simmer for about 20 minutes until very tender. They are ready when a chopstick or fork can be inserted easily. (Steaming is also an option.)
Step 2
While still warm, peel the cooked sweet potatoes and transfer them to a large bowl. Mash them thoroughly with a spoon or fork until smooth, ensuring there are no lumps. Mashing them while warm makes the process easier and results in a smoother dough.
Step 3
Divide the mashed sweet potato mixture into portions and shape them into balls, about 2-3 cm in diameter. Flatten each ball, make a small indentation in the center, and place 70g of mozzarella cheese and 50g of softened butter inside. Carefully enclose the filling with the sweet potato dough, ensuring no cheese or butter leaks out. Shape them into neat, slightly flattened balls. (If the dough is too sticky, gradually add a little starch until it reaches a manageable consistency.)
Step 4
Arrange the formed sweet potato cheese balls in your air fryer basket, leaving some space between them to prevent sticking. Air fry at 180°C (350°F) for about 10 minutes. For even browning, open the air fryer halfway through (around 5 minutes) and carefully flip the balls. They are ready when they turn golden brown and the cheese inside is melted and gooey.
