  • 7 Japanese sweet potatoes (medium-sized)
  • 400g Hotcake mix
  • 120g Mozzarella cheese (adjust to taste)

Cooking Instructions

Step 1

Thoroughly wash 7 Japanese sweet potatoes and place them in a pot. Cover them with enough water to submerge the sweet potatoes. Bring to a boil over high heat, then reduce to medium-low heat and simmer for about 30 minutes until very tender. They should be easily pierced with a fork. Once cooked, drain the sweet potatoes and let them cool slightly.

Step 2

Once the sweet potatoes have cooled slightly, peel them. Place the peeled sweet potatoes in a bowl and mash them until smooth using a fork or a mashing tool. Add 400g of hotcake mix to the mashed sweet potatoes. Mix well with a spatula or your hands until you achieve a thick sweet potato dough. If the dough is too sticky, add a little more hotcake mix. If it’s too dry, gradually add a small amount of water to reach the desired consistency. Avoid overmixing, as it can make the dough tough. Mix just until the ingredients are combined.

Step 3

Take a portion of the prepared sweet potato dough and flatten it into a round shape on your palm. Be careful not to make it too thin, as it might break during cooking. Place about 120g of mozzarella cheese in the center of the flattened dough, adjusting the amount to your preference. If you add too much cheese, it might ooze out during cooking, so use a moderate amount. Carefully gather the edges of the dough to enclose the cheese, sealing it well to prevent leakage. Then, shape it into a round, slightly flattened patty.

Step 4

Heat a frying pan over medium heat and add a generous amount of cooking oil or butter. Once the oil is sufficiently hot, carefully place the shaped sweet potato cheese patties into the pan. Cook over medium-low heat, allowing them to turn golden brown on one side. Once the bottom is nicely browned, flip them over and cook the other side until it’s also golden brown. You should hear a gentle sizzle, and the patties should be evenly browned, indicating that the cheese inside has melted. Be sure to cook over low heat to prevent the outside from burning before the inside is cooked through.
