  • 9 hard-boiled eggs
  • 300g sweet potatoes (about 1-2 medium)
  • 1 apple (adult fist-sized)
  • 6-8 slices of sandwich bread

Seasoning & Sauce
  • 6-7 Tbsp mayonnaise
  • 2 Tbsp honey mustard (adjust to taste)
  • 1 tsp salt

Cooking Instructions

Step 1

First, prepare 300g of sweet potatoes. Peel them thoroughly and cut them into pieces slightly smaller than bite-sized. Place the cut sweet potatoes in a pot of water and boil until tender, which usually takes about 15-20 minutes. Tip: For extra moisture, you can steam the sweet potatoes with the skin on, then peel and cut them.

Step 2

Prepare 9 hard-boiled eggs. Cut the eggs in half and separate the yolks from the whites. Finely chop the egg whites using a fork or knife. Set the yolks aside for now.

Step 3

It’s best to mash the sweet potatoes while they are still warm. Place the boiled sweet potatoes in a bowl and mash them smoothly using a fork or a potato masher. The key is to mash them until they are fluffy and lump-free.

Step 4

Add the finely chopped egg whites to the mashed sweet potatoes and mix well. Ensure the sweet potato and egg whites are evenly combined.

Step 5

Prepare one apple by washing it well, then dicing it into small cubes. You can leave the skin on, or peel it if you prefer, especially if children will be eating it. Add the diced apple to the sweet potato and egg mixture and mix gently.

Step 6

Now, let’s add the flavor! Add 6-7 tablespoons of mayonnaise, 2 tablespoons of honey mustard, and 1 teaspoon of salt. Mix everything together thoroughly until well combined. Feel free to adjust the amount of mayonnaise and honey mustard to your personal preference. You can also add the reserved egg yolks at this stage for an even richer and creamier flavor.

Step 7

Get your sandwich bread ready. Spread the prepared sweet potato, apple, and egg mixture generously onto one slice of bread. If the bread seems too thick, you can lightly press it down with a rolling pin to make the sandwich easier to handle. Then, top it with another slice of bread. Tip: For children, trimming off the crusts of the bread can make it more enjoyable to eat.

Step 8

Cut the sandwich into desired portions. Cutting it into four equal pieces is usually a good size for kids. If packing it for lunch, wrap it tightly in plastic wrap and then cut it in half to keep it neat. If serving immediately, you can add decorative picks for a more appealing presentation.
