Sweet Potato and Mushroom Rice Cooked in the Microwave
Super Simple Sweet Potato and Mushroom Rice: Making a Single Serving with a Microwave and Silicone Steamer
Tired of using a rice cooker for just one serving? Enjoy a delicious solo meal with nutrient-rich sweet potato and mushroom rice, made easily with a silicone steamer (microwave container) and your microwave. It’s a quick and convenient way to make a satisfying meal for one.
Ingredients- 2/3 cup rice (approx. 100g)
- 1 cup water (200ml)
- 1/4 sweet potato (approx. 50g)
- 50g of your favorite mushrooms (shiitake, king oyster, etc.)
- 2 tsp soy sauce
- 1 piece of dried kelp (kombu), 5x5cm
- 1 tsp olive oil (optional)
Cooking Instructions
Step 1
First, rinse the rice under running water until clean and soak it for at least 30 minutes. While the rice is soaking, peel the sweet potato and cut it into bite-sized cubes (about 1.5cm). Trim the stems from shiitake or other mushrooms you have at home (like king oyster or enoki) and cut them into manageable pieces.
Step 2
Place the soaked rice into a silicone steamer (microwave container) and add 1 cup of water. (If you measured rice with a paper cup, ensure the rice doesn’t fill more than 80% of the container). Add the cubed sweet potato, chopped mushrooms, and 2 teaspoons of soy sauce, distributing them evenly. For an enhanced flavor, you can add the piece of dried kelp and 1 teaspoon of olive oil at this stage.
Step 3
Remove the lid from the silicone steamer and place it in the microwave. Cook for 4-5 minutes. After cooking, let it sit undisturbed for 1-2 minutes to allow it to steam.
Step 4
Carefully remove the silicone steamer from the microwave. Use a spatula to gently mix the rice and ingredients together.
Step 5
Cover the silicone steamer with its lid and return it to the microwave. Cook for an additional 6-7 minutes. Covering the lid helps the flavors of the sweet potato and mushrooms infuse into the rice, ensuring a moist and delicious result.
Step 6
Once cooking is complete, do not open it immediately. Let it rest, covered, for another 3-5 minutes to allow the rice to fully steam. Excluding the rice soaking time, the total cooking time is approximately 12 to 15 minutes, making it incredibly convenient.
Step 7
This flavorful one-bowl meal is delicious on its own without any additional seasoning sauce, thanks to the sweetness of the sweet potato and the savory umami of the mushrooms. Enjoy your meal!
