How to Make Crispy Sweet Potato Pancakes with Cheese (Sweet Potato Hash Brown Style)
My husband has been focusing on his diet lately, eating only eggs and sweet potatoes instead of late-night snacks. Since we finished the sweet potatoes from my parents and bought more from the market, I wanted to enjoy them in a more delicious way than just boiled. So, I created this ‘Sweet Potato and Cheese Pancake’! The visuals are stunning, and the taste is incredible. I highly recommend everyone try making it at least once.
Ingredients- 2 medium sweet potatoes
- 1 slice cheddar cheese
- 2 Tbsp pancake mix
- A little grated Parmesan cheese
- 1 pinch salt
- A little dried parsley flakes
Cooking Instructions
Step 1
First, peel the sweet potatoes thoroughly. Then, julienne them into thin strips and soak them in cold water for about 5 minutes to remove excess starch. This step helps to make the pancake crispier.
Step 2
Drain the julienned sweet potatoes well using a colander. It’s important to remove as much moisture as possible; you can gently press them with a kitchen towel. Add 2 tablespoons of pancake mix and a pinch of salt to the drained sweet potatoes, and toss to coat them evenly. The pancake mix will help bind the sweet potato strands together.
Step 3
Lightly grease a preheated egg pan or a regular frying pan. Spread half of the coated sweet potato mixture thinly and evenly in the pan. An egg pan is great for making round pancakes, but a regular frying pan works just as well. Cook over medium-low heat until golden brown.
Step 4
Once the bottom is golden and crispy, carefully flip the pancake and cook the other side until equally golden and crisp. Ensure the sweet potato is cooked through by adjusting the heat as needed. Flip and turn as necessary to achieve a beautiful, even golden-brown color on both sides.
Step 5
Place the slice of cheddar cheese on top of the cooked sweet potato pancake. The residual heat will melt the cheese beautifully.
