  • 100g unsalted butter, softened to room temperature
  • 120g creamy peanut butter
  • 100g granulated sugar
  • 2 large eggs, at room temperature
  • 200g cake flour (or all-purpose flour)
  • 1/2 tsp baking powder
  • 2 Tbsp chopped peanuts (for topping)

First, prepare 100g of butter that has been softened at room temperature until it’s pliable.

Measure out 120g of smooth, creamy peanut butter.

In a mixing bowl, combine the softened butter and peanut butter. Use a whisk or electric mixer to blend them until they form a smooth, creamy mixture. Be careful not to overmix.

Gradually add 100g of granulated sugar in 2 to 3 additions, whisking continuously after each addition. Continue beating until the sugar is fully incorporated and the mixture is light and fluffy. This step helps make the cookies crispier.

Crack in 2 large eggs, one at a time, and whisk well after each addition until fully combined. The mixture might look slightly curdled, but this is normal. Ensure everything is smoothly incorporated.

Have your 200g of cake flour ready.

Sift the cake flour and 1/2 teaspoon of baking powder together directly into the wet ingredients. Sifting prevents lumps and results in a lighter cookie texture.
