Main Ingredients
- 300g small dried anchovies
- 50g sliced almonds
- 50g walnuts
- 50g roasted cashews
- 50g Brazil nuts
Seasoning
- 2 Tbsp sunflower oil
- 3 Tbsp soy sauce (jin ganjang)
- 4-5 Tbsp oligodang (corn syrup)
- 1 Tbsp perilla oil
- A pinch of sesame seeds

Cooking Instructions
Step 1
Start by placing the roasted cashews and Brazil nuts into a zip-top bag. Use a rolling pin or a heavy object to gently crush them into smaller, bite-sized pieces. It’s best to leave some texture rather than crushing them into a fine powder.
Step 2
If you are using sliced almonds, you can use them as they are. If you have whole almonds, place them in the zip-top bag with the cashews and Brazil nuts in step 1 and crush them together.
Step 3
Crush the shelled walnuts into manageable pieces as well. Feel free to add or substitute with other nuts you have on hand, such as sunflower seeds, pumpkin seeds, or peanuts. Get creative with your nut selection!
Step 4
Heat a dry pan over medium heat. Add the small dried anchovies and stir-fry for 2-3 minutes to remove any fishy smell. Then, add 2 tablespoons of sunflower oil. Continue to stir-fry the anchovies, almost deep-frying them, until they are golden brown and crispy. Be careful not to overcook them to the point of becoming too hard.
Step 5
Once the anchovies are nicely browned, add all the crushed nuts to the pan. Mix well with the anchovies and stir-fry for another 2-3 minutes. After this, reduce the heat to medium-low to prevent the sauce from burning.
Step 6
While maintaining the medium-low heat, add 3 tablespoons of soy sauce and 4-5 tablespoons of oligodang to the pan. Stir everything together until well combined. It’s crucial to lower the heat before adding the soy sauce and oligodang, as high heat can cause them to burn and result in a bitter taste. Adjust the amount of oligodang according to your sweetness preference.
Step 7
Continue stir-frying for an additional 1-2 minutes after adding the seasonings. Your delicious sweet and nutty anchovy stir-fry is now ready! Turn off the heat, and finally, stir in 1 tablespoon of perilla oil and a pinch of sesame seeds. This stir-fry is wonderfully crispy, sweet, and nutty.
